Niida Shizenshu Junmai Genshu - Nakagumi Nama (Middle Press, Unpasteurized) This unpasteurized sake captures the fresh, lively character of the shibori-tate (just-pressed) style, offering a bright, sweet-and-tart aroma with a touch of natural carbonation from fermentation. Compared to the rich, mellow texture of our standard Shizenshu, this version delivers a juicier profile - full-bodied rice sweetness balanced by a clean, vibrant acidity. All Shizenshu sakes are crafted using our traditional Kumidashi Yondan brewing method, a unique technique passed down since its introduction in 1967. This process draws out the rice’s full umami, creating a deep, complex flavor found nowhere else. True to the name Shizenshu ("Natural Sake"), it is made only with naturally cultivated rice and pure spring water (medium-hard). The depth and harmony born from the living microorganisms in our brewery define the unmistakable character of Niida Shizenshu.
