Japan’s first "natural sake." This is the flagship Niida Shizenshu, loved by many since its debut in 1967. Brewed only with naturally cultivated rice and pure spring water, this Junmai Ginjo represents the heart of our brewery. Using our traditional Kumidashi-Yondan brewing method - passed down for generations - we draw out the rice’s fullest umami and gentle sweetness. Balanced by the firm acidity characteristic of the Kimoto starter, it offers depth and harmony in every sip. Polished to 60%, the sake reveals an elegant ginjo aroma that complements its rich, mellow flavor, resulting in a refined yet full-bodied expression of natural sake craftsmanship.
