~Zaku Impression~ Although it is a hi-ire (pasteurized) sake, the "Impression" series is known for its lively effervescence and fresh flavor, almost like a namazake (unpasteurized sake). Some may remember it from when it was previously sold under the name "Proto Type." At that time, the sake was pasteurized using a bottle-heating method, which required so much manual labor that maintaining a stable production volume was nearly impossible. Through repeated trials and refinements-such as reducing the pump pressure in the bottling line to minimize stress on the sake, and upgrading equipment to enable precise heating and rapid cooling-the product was reborn as "Impression." The series includes "N," "M," "G," and "H," each named after Saku’s core lineup: Nakadori, Enonotomo, Gennotomo, and Honotomo. The yeast strains used also differ: "N" and "M" use Saku’s in-house preserved yeasts, while "G" uses Kyokai No.7 and "H" uses Kyokai No.14. This sake offers a gentle ginjo aroma and a light, smooth taste, complemented by a lively fizz that gives a refreshing and crisp finish. The balance between aroma and flavor is exceptional, making it a perfect match not only for Japanese cuisine but also for Western dishes.
