~Zaku Impression~ Although pasteurized, this popular series is known for its lively, sparkling sensation and fresh flavor that feels just like unpasteurized sake. Previously sold under the name "Proto Type," many of you may already be familiar with it. Back then, the sake was pasteurized using the bottle-steaming method-a process so labor-intensive that maintaining stable production was nearly impossible. Through countless trials, such as reducing pump pressure on the bottling line to minimize stress on the sake and upgrading equipment for precise heating and rapid cooling, the series was reborn as "Impression." The letters "N," "M," "G," and "H" come from the initials of Saku’s signature products: Nakadori, Enonotomo, Gennotomo, and Honotomo. Each variant uses different yeast strains: N and M: Proprietary house yeast G: Kyokai No.7 yeast H: Kyokai No.14 yeast The aroma is subtle, yet on the palate you’ll notice a delicate hint of melon-like flavor. With a touch of acidity and a slightly dry, composed taste, this sake pairs beautifully with food and is versatile enough to complement an entire meal from start to finish.

The pristine underground water from the Suzuka Mountains is exceptionally suited for sake brewing, while the Ise Plain is renowned for cultivating high-quality rice. Founded in 1869 (Meiji 2) in Wakamatsu Village as Daikokuya Shimizu Seizaburo Shoten, it is now the only sake brewery remaining in Suzuka.
