Only the dripping drops are carefully collected and bottled without any extra effort from the sachet in which the mash is hung. Yamada-Nishiki with a rice polishing ratio of 40% is brewed slowly at a low temperature. This is a gem of a sake that has been brewed slowly over time and with a lot of care, in pursuit of the ultimate in quality. The aroma of jasmine and narcissus is gorgeous, and the subtle sweetness and fresh acidity are harmonized elegantly at a high level with a sense of transparency. The pristine underground waters flowing from the Suzuka Mountains are perfectly suited for sake brewing, while the Ise Plain is known for producing high-quality rice. Founded in 1869 (Meiji 2) as Daikokuya Shimizu Seizaburo Shoten in Wakamatsu Village, the brewery has continued its craft through the ages. Today, it stands as the only sake brewery in Suzuka. Carrying on the traditional techniques of the Ise Toji, the brewery devotes itself to crafting true aji-zake-sake of genuine depth and character-one that lives up to its history and heritage, brewed with wholehearted dedication.
