The unfiltered storage brings out a gentle aged aroma, along with enhanced smoothness, sweetness, and depth-three qualities that truly stand out. Enjoy it with hot water (“oyuwari”) to further highlight its natural sweetness. |

Toyonaga Shuzo was founded in 1894 (Meiji 27) by the first-generation owner, Tsurumatsu Toyonaga, in Yunomae, Kuma District. From the very beginning, the brewery cultivated its own rice fields and produced shochu using rice grown by their own hands, releasing the brand “Miyakotsuru,” named after the Miyako River, a tributary of the Kuma River. Over 125 years later, the fourth-generation owner, Shiro Toyonaga, has deepened this founding philosophy even further. Since 1986, the brewery has pursued sustainable agriculture and brewing, focusing on organic shochu production under the “Toyonaga Kura” brand, made from organic Kuma rice. In the world of wine, the concept of “terroir”-soil, climate, and local environment-is widely recognized. Similarly, Toyonaga Shuzo has always embraced the terroir of Kuma, crafting shochu from “Kuma ingredients, Kuma water, and Kuma people.” Together with local contract farmers, the brewery cultivates organic raw materials and produces shochu rooted in the region. Toyonaga’s organic shochu uses only locally grown, JAS-certified organic ingredients. Each batch is carefully crafted by skilled brewers who uphold 500 years of Kuma shochu tradition, resulting in a spirit with a truly natural flavor. It pairs beautifully with food, complementing dishes without overpowering them, and offers a taste that never grows tiresome. This shochu holds great potential to harmonize with today’s evolving and diverse food culture.
