"Local sake." In the past, it was something that could only be enjoyed in the region where it was brewed. Today, it has crossed oceans and is enjoyed by people around the world. Precisely because it can now be enjoyed anywhere, we take pride in calling it the sake of our hometown. To remain true to local sake, we brew using locally grown sake rice and brewing water from the Yatsugatake mountain water system. Every step-washing the rice in small 10kg batches, making koji, brewing, fermentation control, full bottle pasteurization, and cold storage-is carried out with meticulous care. Day after day, we brew without compromise, staying close to the koji mold and yeast, listening carefully to what they tell us. With this message as our brand's guiding theme, we continue to craft sake with unwavering dedication and pride.
