This sake is fizzy. Please open the bottle with care to avoid spilling. (1). Always store in a refrigerator and keep chilled at all times. (Strictly keep the temperature below 10°C.) 2. (2). When opening the bottle, loosen and tighten the screw cap repeatedly to fully deflate the bottle and make sure the liquid level does not rise before consuming.

At Shishi no Sato, our Junmai Ginjo class sake with a rice polishing ratio of sixty percent or less is crafted to be enjoyed young and fresh. The natural carbon dioxide produced during fermentation is retained in the bottle, where it acts as a natural antioxidant. For those who prefer a more matured character, the sake can be poured into one cup and then transferred into another. This process allows the carbon dioxide to dissipate, resulting in a softer and rounder flavor. Gently warming the sake will also promote further maturation and bring out additional depth and complexity. By exploring these different ways of enjoying the sake and pairing it thoughtfully with food, you can experience Shishi no Sato more fully. One issyo or one point eight liters of Junmai sake is roughly equivalent to the yield from about one tsubo or approximately three point three square meters of rice paddy.
