Aihara Shuzo was founded in 1875. Although the brewery was forced to suspend operations during the war it later resumed its path in sake brewing. A major turning point came in 1988 when Junichiro Aihara assumed leadership. With a strong desire to brew sake that he himself would truly enjoy he established a firm commitment to quality first and transformed the brewery into a ginjo focused sake producer. The brewerys signature sake Ugo no Tsuki was named by the second generation owner Itaru Aihara taking inspiration from a short essay published in the literary work Shizen to Jinsei by novelist Tokutomi Roka. The name reflects the image of a clear and radiant moon shining brightly in the sky after the rain has passed. With this vision in mind the brewers continue to pursue sake that is pure beautiful and luminous in character.
