The new seasonal release "Senkin Organic Nature W" is here! This year, the alcohol content has been lowered to 14% (undiluted), achieving an unprecedented clarity for a kijoshu (specially brewed sake with added sake for sweetness). This is a kijoshu taken to an entirely natural, expressive extreme. It pairs exceptionally well with seasonal Japanese dishes such as ankimo (monkfish liver) or shirako with ponzu, and also complements rich Western dishes like foie gras. Although kijoshu is often enjoyed as a dessert sake, it can also be served as an aperitif when mixed with sparkling water, offering a fresh and versatile drinking experience.

Senkin was founded in 1806 (the 3rd year of the Bunka era) in Sakura City, Tochigi Prefecture. The name "Senkin" means "a bird serving an immortal," symbolizing a crane, and has been passed down through generations as the brewery's proud name. The brewery practices a "Domaine-style" approach, sourcing rice from fields located along the same water vein as the brewery's spring water, emphasizing the terroir of the land. Senkin also recreates Edo-period brewing methods, branded as "EDO STYLE." This approach combines classical techniques with ultra-natural production:
