Mukai Sake Brewery Co.
Founded in 1754, this brewery sits along the iconic funaya boathouses of the Tango Peninsula-an Important Preservation District for Groups of Traditional Buildings-and is known as Japan's closest sake brewery to the sea. The current toji (master brewer) is Kuniko Mukai, a member of the Tajima Toji Guild. As a female toji, she has pioneered innovative sake such as "Ine Mankai," brewed with ancient red rice, and "Natsu no Omoide," crafted using shochu koji. At the same time, she continues to produce sake that emphasizes the pure flavor of rice and a clean, sharp finish.
