Concept: "Rebirth" HIRAN Reborn is crafted using a rare brewing method known as saijo-shikomi, or "re-fermentation," in which finished sake is used in place of part of the brewing water. This unique process embodies the very idea of rebirth - a sake once born is given new life in a completely different form. As its name suggests, HIRAN Reborn represents a new expression of kijo-shu proposed by HIRAN. While retaining the luscious, velvety sweetness typical of kijo-shu, HIRAN Reborn breaks away from the notion that such sake is "delicious but heavy." Our goal was to create a kijo-shu that can be enjoyed longer and more comfortably, without fatigue. To achieve this, we highlighted a firm, elegant acidity to support its rich sweetness, resulting in perfect balance and drinkability. This meticulous design makes HIRAN Reborn an excellent companion for flavorful dishes such as spicy Chinese cuisine. It also shines as a dessert sake - try drizzling a little over vanilla ice cream for a sophisticated after-dinner treat.
