The brewery was founded in 1804 (the first year of the Bunka era) by Mankichi Miyata. During his travels for the feudal sankin-kotai system, he once found a lost tobacco pouch in Osaka. As a reward, the owner taught him the method of vinegar brewing, which he brought back to his hometown to start his vinegar business - the origin of this brewery. In 1921, the fourth generation began producing shochu, and in 1928, mirin and soy sauce production commenced, continuing to the present day. The brewery has faithfully preserved the traditional brewing tools and techniques passed down through generations. Today, Chikako Miyata, wife of the seventh-generation president, leads the brewery, while the next generation, Kensuke, strives to create an even better version of “Hina Musume” sake.
