Founded in 1894 in Ageo City, Saitama Prefecture, Hokusei Shuzo has been brewing sake for over a century using soft subterranean water that flows from the Chichibu Basin, crafting its long-standing flagship label, Bunraku. The brewery's new brand, Sarai, was created by fifth-generation brewer Ryuichiro Hokusei, who spent nearly five years developing it with the hope that even those unfamiliar with sake would come to enjoy and appreciate its charm.
