About Daishinshu Sake Brewery Founded in 1888 (Meiji 21), Daishinshu Sake Brewery is headquartered in Shimada, Matsumoto City, with its brewing facilities located in Toyono, Nagano City. The brewery's signature labels include "Daishinshu" and "Kazuki." Using pure natural spring water drawn from the Northern Alps at its headquarters and locally grown sake rice - Kinmon Nishiki and Hitogokochi - cultivated under contract exclusively in Nagano Prefecture, Daishinshu brews sake that embodies the blessings of Shinshu's rich natural environment. All rice is carefully polished in-house, ensuring full control over quality. Every sake is bottled within ten days of pressing and stored under cold conditions to preserve its freshness and elegant aroma. The result is a meticulously crafted sake with a refined ginjo fragrance and a crisp, dry finish - a true expression of "heaven's blessings in a beautiful sake." Since the 2020 brewing year, Daishinshu has consolidated all brewing operations at its Matsumoto headquarters, establishing a fully integrated production system.
