Aoki Shuzo Co., Ltd.
Founded in 1805 (Bunka 2, late Edo period), our brewery is located in the Nobi Plain in western Aichi Prefecture. In winter, the cold Ibuki winds sweep in from the west, creating an ideal environment for sake brewing. In 1959 (Showa 34), the Ise Bay Typhoon struck western Aichi without warning. Our brewery was submerged in seawater and completely destroyed. However, the 13th-generation president immediately devoted efforts to rebuilding. From this point began Aoki Shuzo's new philosophy: "Crafting flavorful, truly delicious sake." Since then, we have embraced traditional Yamahai brewing, a method requiring time and skill. Today, we also practice kimoto-style brewing, yeast-free fermentation, and complete fermentation, striving to create robust, full-bodied sake with ever-deeper flavor.
